Position Summary and Responsibilities:
The primary purpose of this position is to prepare meat with a knife to exact portions while maintaining yields.
* Cut meat (beef, pork, lamb, and veal) into steaks by hand to exact portions.
* Pre-trim meat for cutting machines, cut stew and tips as needed.
* As production demand varies, all Meat Cutters are expected to have hour and day flexibility.
* Perform other duties, as assigned.
* Partner with supervisor and FSQA team on product quality issues.
* Maintain all work surfaces, tools, and equipment clean and sanitized.
* Always follow the USDA, HACCP, SSOP, food and employee safety rules and regulations.
* Wear required protective and food safety equipment at all times while in the production area.
Education and/or Work Experience Requirements:
* Knowledge of beef, pork, lamb, and veal cuts.
* Experience in portion control desired.
* Able to multitask in a fast-paced work environment.
* Excellent Communication Skills.
* Excellent teamwork skills.
* Self-Starter.
* Basic math knowledge.
Physical Requirements:
* Ability to safely and successfully perform the essential job functions consistent with the ADA, FMLA and other federal, state and local standards, including meeting qualitative and/or quantitative productivity standards.
* Ability to maintain regular, punctual attendance consistent with the ADA, FMLA and other federal, state and local standards
* Must be able to push, pull, lift and carry up to 80 lbs.
